The Smithsonian Bird Friendly certification has a strict verification process and is impactful in biodiversity preservation and staving off deforestation. Bird Friendly coffee is also certified Organic, and this one is Fair Trade as well.

About the roaster

Birds & Beans is a pioneer in only offering coffees that are certified Smithsonian Bird Friendly, Organic, and Fair Trade. The Bird Friendly seal is exceedingly difficult to earn, and is equally as rare in the specialty coffee world - about 1% of specialty coffees possess this certification, which in part requires farms to grow coffee in shade from native tree canopies.

How to get the best cup

This coffee is sold whole bean only.

For best results, grind just before brewing. Start with a medium grind for drip coffee, medium-fine for pour-over, and coarse for French press. If the coffee tastes sharp or sour, try grinding a little finer. If it tastes bitter or heavy, try grinding a little coarser.

Small grind adjustments can make a big difference.

About the Origin

Coffees from Nicaragua are typically smooth and balanced, often featuring cocoa, nut, and subtle fruit notes. They usually lean toward a more classic, rounded profile rather than sharp acidity.

Nicaragua is a mid-sized exporter with moderate production, offering consistent but not overly abundant availability.

What it Means

Smithsonian Bird Friendly: this certification verifies that the coffee was grown sustainably, without deforestation, and in shaded areas that preserve native migratory bird habitats and biodiversity. Around 1% of specialty coffee holds this certification.
