Brownie - Colombia (Black Honey, 120 hr fermentation)

A fruit-forward Colombian coffee for people who like something a little more unusual.

We chose this because Colombian coffees, while popular, are very rarely processed using the black honey method paired with a long period of fermentation.  These processes bring out bold aromas and flavor profiles, encompassing cherry, lime, and chocolate.

If you’re curious about experimental coffees but don’t want something that feels too wild, this is a strong place to start.

Why we chose it

We chose this coffee because it shows an experimental side of Colombian coffee.

The black honey process and 120-hour fermentation create a cup that is more layered and fruit-forward than a typical washed Colombian coffee. There is sweetness and brightness, but it still has enough chocolatey depth to feel grounded.

We also wanted to highlight this coffee because it is the first experimental coffee produced by Carolina Ramirez. Experimenting with coffee production and processing is critical to understanding alternative methods that may consume fewer resources while still yielding exceptional beans.

Is this coffee a good fit

Good fit if: you like traditional Colombian coffees and want to try something in that lane but more experimental.

Probably not for you if: you like coffees that are either very bright or very dark.

About the Origin

Coffees from Colombia are typically balanced, with a mix of fruit, caramel, and chocolate notes. They often sit between bright and rich profiles, making them widely approachable.

Colombia is a major global exporter known for consistent and widely available coffees.

What it Means

Black honey process: Part of the fruit is left on during drying → smoother, slightly sweeter

Extended fermentation (120 hours): Longer fermentation builds complexity → more layered, fruit-forward notes
